CODEX STANDARD FOR QUICK FROZEN GREEN BEANS
AND QUICK FROZEN WAX BEANS
CODEX STAN 113-1981
1. SCOPE
This standard shall apply to quick frozen green beans and quick frozen wax beans from
suitable varieties of the species Phaseolus vulgaris L. and quick frozen green beans from suitable
varieties of the species Phaseolus coccineus L. as defined below and offered for direct
consumption without further processing, except for size-grading or repacking, if required. It does
not apply to the product when indicated as intended for further processing or for other industrial
purposes.
2. DESCRIPTION
2.1 Product Definition
Quick frozen Green Beans is the product prepared from fresh, clean, sound, succulent
pods of the plants conforming to the characteristics of suitable varieties of the species Phaseolus
vulgaris L. or Phaseolus coccineus L. Quick Frozen Wax Beans is the product prepared from
fresh, clean, sound, succulent pods of the plants conforming to the characteristics of suitable
varieties of the species Phaseolus vulgaris L. Strings (if any), stems, and stem ends are removed,
and the pods washed and sufficiently blanched to ensure adequate stability of colour and flavour
during normal marketing cycles.
2.2 Process Definition
2.2.1 Quick frozen green and quick frozen wax beans are the products subjected to a freezing
process in appropriate equipment and complying with the conditions laid down hereafter. This
freezing operation shall be carried out in such a way that the range of temperature of maximum
crystallization is passed quickly. The quick freezing process shall not be regarded
